■Hakushu, bounty of nature

We finally found Hakushu forest, looking for the place where we can make the most of Japanese nature's bounty.

It enriches the flavour and taste of single malt whisky 'Hakushu'.

That's single malt whisky 'Hakushu'.

■Environment and History

There are Mt. Yatsugatake on the north and Mt. Komagatake on the west of Hakushu distillery. The construction of distillery which is surrounded by deep forest and a lot of limpid stream gave priority to harmony with nature under the concept: forest park factory.

You can watch 50 species of birds in the first 'bird sanctuary' which was set in private factory in Japan.

Since establishment, Hakushu distillery pursues new flavour and taste of whisky with the abundant nature.

■Craftsmanship

The 'human' of distillery makes the most of the nature's bounty of Hakushu.

The skill and heart.

Let us introduce some unique craftsmanship of single malt whisky 'Hakushu' which was grown in Suntory through trial and error for long a time.

■Fermentation

It takes long time to ferment wort in Suntory whisky.

We use yeast which is severely selected through long time study and experience.
In addition to distillery's yeast, we dare to use ale yeast to create creamy and fruity taste.

In Hakushu distillery, to make Lactobacillus more active, traditional 'wooden washback' is used and it makes unique, fresh and deep flavour.

■Distillation

Wash is distilled twice with copper pot called 'pot still'.

In Hakushu distillery, all the wash stills(first distillation) are direct fired type. 1,200℃ direct fire makes much flavour compound.

Hakushu distillery is unique compound distillery. It has various kinds of potstill which makes from light spirits to heavy one.

■Maturation

Suntory thinks deeply about casks because it makes variety of taste.

Barrel, hogshead, puncheon, sherry butt. We control the maturation considering not only type of cask but also their history and condition of charring.

The spirits in cask breaths for many years in humid forest and gets unique flavour and taste of Hakushu.

■Blending

Hakushu distillery makes so many kinds of unblended whisky using various kinds of yeast, washbacks, potstills and casks. Blender's job is to compose one whisky harmonizing the character of them.

They try hard to realize the ideal whisky tasting 200 to 300 unblended whisky a day to find their character.

The craftsmanship based on experience and sense maintain the taste of single malt whisky 'Hakushu'.
